Yummy Healthy Oatmeal Cookies


The kids aren’t feeling well today and I’m a firm believer in using whole foods and natural-God-given things to help your body heal itself. I’ll probably talk more about this stuff some other time, but for today, I’m sharing a yummy snack I made for the kids. They’re fighting some form of a cold and among other things they were feeling weak. So, I made them some energy boosting oatmeal cookies.

I didn’t want to add any sugar or anything because sugar has no place in a little body that is trying to heal ๐Ÿ˜‰ so I just used mashed bananas. Bananas are full of potassium and iron so they are energizing and nourishing just by themselves. Plus, they contain a mood regulating amino acid called tryptophan which is converted to serotonin in your body…elevating your mood. If you’ve ever been sick or taken care of someone who is sick then you know a happier mood is always a plus!

Next, I added some steel cut oats. Both of my kids love oatmeal. It’s a staple in our home, so we always have some in the pantry. It is full of a specific fiber called beta-glucan as well as some more iron, a mineral that your body needs to carry oxygen to your muscles and other tissue. Sounds like a good idea for a healing body right?

Then I added in some flax seeds and chia seeds. Both of these seeds pack a huge nutritional punch! Flaxseed is packed with lots of fiber plus phytochemicals, which are compounds found in plants that are beneficial to the body. Flax seeds are packed with Omega-3 fatty acids are essential compounds that our bodies need to function. Omega-3s have been shown to have incredible health benefits. Now, chia seeds are one of my favorite super foods ever. They are fascinating. Chia is rich in omega-3 fatty acids- even more so than flax. Chia also provides the body with vitamins A, B, E and D and minerals such as calcium, copper, iron, magnesium, manganese, molybdenum, niacin, phosphorous, potassium, silicon, sodium, sulphur, thiamine and zinc. Per gram chia seeds contain: 8x more omega-3 than salmon, 6x more calcium than milk, 3x more iron than spinach, 15x more magnesium than broccoli, 2x more fiber than bran flakes, 6x more protein than kidney beans, 4x more phosphorous than whole milk. Like I said, fascinating, right?!

The next ingredient is yet another one of my favorite things ever….Coconut Oil! I can go on and on, but I’ll try to keep it short ๐Ÿ™‚ I’m actually going to link up on this one so I can just quote them. I like how this site kept it short and to the point.

The last ingredient is the simple almond. This was really just so they would be pretty. However, almonds have good nutrition too, so I’ll talk about them too. They are rich in mono-unsaturated fatty acids like oleic and palmitoleic acids. They are an excellent source of vitamin E. These nuts are packed with many important B-complex groups of vitamins such as riboflavin, niacin, thiamin, pantothenic acid, vitamin B-6, and folates. Together, these vitamins work as co-factors for enzymes during cellular substrate metabolism. they are also an incredible source of minerals such as manganese, potassium, calcium, iron, magnesium, zinc, and selenium.
Plus, they’re yummy! We love to make homemade raw almond milk. I’ll share about that sometime….but let’s finish these cookies!

Ok so now I’ve explained all of the health benefits of the ingredients I chose for our afternoon snack. As you can see, these ingredients are all nutritionally dense and full of nourishing/healing properties. The kids LOVED them, and they are both feeling better tonight! Is it my healing cookies? Maybe…. You’ll just have to try them out to see! Even if you’re feeling great, they’re just a good healthy snack:)

Here’s my official recipe:

1 1/2 banana
1 cup steel cut oats
3 Tablespoons flax seeds
2 Tablespoons chia seeds
One almond for each cookie

Mash the bananas and stir in the oats, and seeds. Form into a cookie shape in the pan. (They won’t rise or anything, because there’s nothing in them to cause any change. They will basically look the same when you take them out as they did when you put them in) top each cookie with one almond. Bake at 300 for about 15-20 mins till they’re firm.

This made nine cookies for me. You could make them bigger or smaller of course;)
